Chewy Granola Bars


What a way to start off a new year, than with a blizzard.




Honestly when I was outside yesterday it didn't look that bad but apparently it was worse than it looked. Just last night about 8 inches fell. John tried going in to work this morning because from our driveway it didn't look too bad, but once he hit the road, it was pretty bad so he turned around and came home. If he didn't have a 40 mile commute he probably would have went in, but having to pass through a couple of towns that are not known for their consistency with plowing, and highway driving, it was best he came home anyway. Turns out that his boss didn't want anyone to come in anyway so it all worked out.

Another way to kick on the New year is to do some baking! One of my goals for this year is to stay on top of baking and keeping homemade snacks on hand. The first snack I made to jump start this goal were granola bars. 



Chewy Granola Bars

2 1/2 cups crisp rice cereal
1 3/4 cup oats
1/4 cup ground flaxseed
1/2 cup coconut
1/2 cup honey
1/2 cup sugar
1/2 TBS. Molasses
1/4 tsp salt
2/3 cup peanut butter
1 tsp vanilla
1/2 cup mini chocolate chips

Combine the rice cereal, oats, flax and coconut in a large bowl.

In a saucepan add the honey, sugar, molasses, and salt over medium heat. Bring to a boil and boil for 1 minute. Remove from heat and stir in peanut butter and vanilla until melted.  Let cool for at least 5 minutes then stir in the chocolate chips. (I was impatient and my chips melted. They tasted good still!)

Line 2 brownie pans with parchment paper and divide mixture evenly. Press until flat. Let sit for at least an hour. Cut in to bars. Store in an airtight container.

It's only the 3rd of the month and I've already done a handful of baking. I've made two different types or bread, pizza dough, granola bars, French toast, and our usual dinners. I think I'm starting the year off right. ;)
