I hope everyone had
a good weekend! Remember Friday when I
said I was slacking on my cooking? Well, I made up for it on Saturday. I made
some bread, enchilada sauce, and cooked some beans in the crock pot.
Beans are a staple
in my house. I try to incorporate beans into almost all of our meals and I try
to make a few meatless meals a week so beans are KEY. I used to buy canned
beans for the convenience but then I learned about BPA and all the other junk
they put in canned stuff I made the decision to just buy dry. To avoid soaking
every single night and cooking them in the morning, I use my trusty crock pot
to soak and cook them.
To cook beans in the
crock pot, here is what you need
1 crock pot of your
choice (I'm sure you figured that out though)
8 cups of water
3 cups of beans,
that have been soaked overnight
Add beans and water
to crock pot. Put temperature on high for cook for 6 to 8 hours until they are
tender. Cool for about an hour then drain and let cool until room temperature.
Once they are
cooled, freeze them in 1 cup portions
Now, I always have
beans available and I know what is in them too.

What a great idea! We love beans too and this looks so easy. I bet it really cuts down on the sodium...
