…aka alphabetio's as
my son called them. I've been wanting to make homemade spagettio's for some
time but I can't find that O pasta anywhere! Then it dawned on me that I could
use any small soup pasta. Duh, sometimes I can be blonde. We all have our moments
though. Actually, I've been wanting to make every recipe I am in possession of
but I figured homeade spaghettio's, err, alphabetios was a good place to start,
especially with a 6 year old.
My husband and I both love grocery shopping so
we went today with the gift card that my mother in law gave us to stock up on
some pantry staples. When I saw the box of mini alphabet pasta I knew I had to
make spaghettio's. I made the mistake of mentioning that out loud and the
moment I mentioned spaghettios my son went crazy. He was like a broken record
in the store, asking me every 10 minutes when I was going to make them.

I wasn't planning on making them today but he
wouldn't let up so I gave in. I was in a cooking mood so I didn't mind. I browsed online and found a few recipes but
as usual *smile* I didn't follow any of them.
I have a bad habit of not using recipes as is. I use them as guidelines.
Homemade
Spaghettio's using mini alphabet pasta
*ETA- I made the recipe a few more times and included the changes I made. I've also made them with homemade tiny meatballs too*
Here's what you
need:
1- 28oz can of
crushed tomatoes
Water (fill empty
can most of the way, leaving about an inch)
1 tsp garlic powder
1/2 tsp onion powder
1 tbs. sugar
1/2 tsp each parsley, oregano, basil
2 tablespoons Parmesan cheese
2 tablespoons Parmesan cheese
1 cup of mini
alphabet pasta
Salt and pepper to taste
Salt and pepper to taste
Add all ingredients
except pasta to a medium sized saucepan. Bring to a boil over medium heat.
Reduce and simmer for about a least an hour (to get the most flavor). If adding meatballs you can cook the meatballs in the sauce. Add pasta. Stir frequently for about
20 minutes until pasta is al dente.
Serve and enjoy!
I can't believe this year is almost over! Boy
did it fly by. With everything that has gone on, I'm ready to wave goodbye to 2012 and welcome
2013 with open arms. I have a feeling
it's going to be a good year!
